Baked Peppers
4 large red peppers, 1tbsp extra virgin olive oil, 2 medium red onions, 2 garlic cloves, 16 pitted black olives, 3 1/2 oz goats cheese.
Makes 4 servings, 165 calories per serving
Preheat oven to 200°c/Gas mark 6.
Halve the peppers lengthways leaving stalks intact. Remove the seeds and any white flesh. Take a small piece of foil and wrap it around the stalks. Place the peppers in a roasting tin, cut side
uppermost and brush with oil. Peel and cut the onion into thin wedges and scatter them over a non stick baking sheet, place the peppers on to the top shelf of the oven and the onion
onto the shelf below, roast for 20 mins. Meanwhile peel and slice the garlic into slivers and place in a bowl with the olives, remove the peppers and onions from the oven
and fold the onions into the garlic mixture, cut the goats cheese into wedges and add. Fill each pepper half with the mixture
and roast for a further 15 minutes and serve with a garnish of basil leaves and a side salad.
